A refreshing beverage of pineapple and tamarind juice for your Cinco de Mayo celebration.
Let the pineapple chunks rest about an hour in the fridge.
Take half of the chunks and add them to a blender afterward and blend them until smooth. Take a bowl and place a sieve on top. While running water through the sieve, press the mashed pineapple through it as well.
Add the liquid to a drink container and add the tamarind juice. Add more water if the taste is too strong or the texture not completely liquid. Cool overnight or at least 5 hours.
Serve with extra pineapple chunks in the serving glasses or the drinking jar and garnish with one pineapple chunk.
