Tres Leches Cake with Summer Fruits Recipe

  • 350 gr all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 5 large eggs
  • 150 gr granulated sugar plus 1 tbsp extra for garnish
  • 1 tsp vanilla extract
  • 115 gr butter melted and 1 extra cube for greasing
  • 1 1/3 cup condensed milk
  • 300 ml evaporated milk (coffee milk)
  • 190 ml whole milk
  • 250 gr mix of strawberries, blueberries, cherries, red currants and raspberries


  • Preheat the over to 180 degrees and lightly butter a baking dish
  • In a large bowl beat the eggs and sugar with an electric mixer on high until thick and light of color. Add then the vanilla.
  • Turn the mix to low speed and add the flour first, then the baking powder and finally the salt.
  • With a spatula fold the melted butter into the mixture.
  • Pour batter into baking dish and bake until the top is golden brown and a toothpick inserted in the center comes out clean, around 30 minutes.
  • In another bowl mix together the milk. Poke the cake with a wood skewer and pour half of the mixture over the top and let it absorb for 5 minutes. Pour the rest of the mixture and let it absorb again. Let the cake rest for 1 hour.
  • Before serving slice the top part of the cake to even it out. Lay fruits on top and sprinkle with sugar.
