Easy Veggie Salad Platter Recipe

If you’re looking for something quick and easy to serve guests for a lunch or tea-time than this is it. When I was living in Holland, people used to serve this type of platter often. They are big on pre-made salads and my mother-in-law used to serve it often during parties or just when we’re visiting. It was often just salads and crackers, but I decided to make it a bit fancier and make a Veggie Salad Platter instead. There is literally no cooking involved.

How to Make a Salad Platter

Okay, a big part of the veggie salad platter was just ready-made. The only thing I needed to do was chop the vegetables. When I used to live in the Netherland I always bought either salad from a well-known brand or supermarket-brand. On the island though, the supermarkets make their salad pretty much every day. So, I get to buy “freshly-made salad” that is almost the same as home-made without having to actually do the work. You may find better quality salad at a deli store, at least that was the case in Holland.

In my case, I chose an egg salad and a chicken salad for my salad platter. You can choose any salad of your liking though. Then have a few veggies that people can much on or add to their toast. I always like carrots and I add celery for the ones who enjoy it (I don’t, to be honest). Then I added some pickles because I do love pickles and their great on your salad toast. The great thing about this platter is that you can completely customize it to your preferences and that of your guests.

What drinks to serve with the platter

I find the platters to be more of a lunch platter (maybe before the main dish), late-lunch, or something you serve during an intimate party. They’re not really something you’ll serve as an appetizer for dinner. If you’re serving this at lunch or late-lunch then pair it with some nice light cocktail like a mimosa or a fruity or fizzy type of cocktail, like the Charred Pineapple Mojito I made for Easter. If you’re serving the vegetable salad platter during a party then any drink will do, but if you want a signature cocktail to pair it with, then I suggest something with a bit more body. For example, something that has some whiskey or dark rum in it—a Mai Tai perhaps?

A quick and easy, no-cook, Vegetable Salad Platter with vegetarian salads, crackers, and delicious veggies to pair it with.

Ingredients
  • ¼ cucumber
  • 2 stalks celery
  • ¼ carrot
  • ½ cup guacamole
  • 1 cup egg salad
  • 1 cup chicken salad
  • ½ cup pickles slices
Instructions
  1. Slice the cucumber horizontally or lengthwise. Chop the celery and carrots in 2-3 inches approx.

  2. Add the salads to a bowl.

  3. Assemble the platter by first adding the salads, then the veggies, and then, at last, the pickles. Serve with love!
