After my successful first endeavor into the float cocktail world, I just had to try creating a float one more time. This time I wanted something unique and a bit more complex than a simple beer and ice cream float. After going back and forth, I realized the recipe was right in front of me.

A glass of red champagne float with a mini champagne bottle in the back. Flowers and a black and white striped napkin on the side.

I had this bottle of champagne sitting on top of my kitchen cabinets, collecting dust, for a while. It was a little celebratory present I got from someone dear to me. I usually don’t drink champagne unless it’s a very special occasion and never more than a glass. Honestly, I basically drink 2 sips of champagne on New Years only. champagne makes me drunk…like puking drunk. I swore off champagne out of my life. Way too fancy, until I found a new use to it.

So while I was never a fan of champagne I found a good use for it. Add some ice cream to red pop, top it off with champagne and there you have it…the perfect cocktail.

Serving the Red Champagne Float

This isn’t a cocktail that you prepare beforehand. It’s so simple that you don’t have to. The beauty of this cocktail is also the preparation Create before the eye of your guest. Let your guest see the color swirl and blend. How it goes from simple red to different shades of reddish-pink. How the bubbles foam adding a layer of foam on top. It’s truly mesmerizing.
