I wish I lived in California because I’d be eating Tex-Mex every day of the week. I visited L.A. a few months ago, and OMG I love Tex-Mex and Mexican food. So as a way of reminiscing on my visit to L.A., I created this delicious and easy nachos dip platter.
What Goes into the Nachos Dip Platter?
I try to make all my appetizer platters as easy as possible, while still offering something different than the usual. I make it easy by using store-bought items that you put together and I make it different by adding something homemade and a few interesting combinations.
This platter features the following “dips”:
- Chili con Carne
- Spicy Charred Corn
We don’t skimp on dips, okay? For the nachos, choose two different nacho flavors. I chose the lime-flavored nachos, which is my absolute favorite, and nachos cheese. Bonus point for you if you can make the nachos from scratch. That would certainly make your nachos dip platter even more special and unique.
I hate having to spend hours in the kitchen when my guests arrive or making my guests wait for the food while I’m in the kitchen sweating my boobs out. Prepping is my go-to strategy and I try to make everything I can ahead of time.
For this nachos dip platter, you can make the spicy charred corn and chili con carne the day or a few hours before. You can even make the queso ahead of time, but that will mean that you need to reheat it before serving. To reheat a splash of milk and stir.
The salsa and guacamole are storebought as they are the easiest and best choice to buy instead of to make.
What Else Can You Eat with Nachos?
The great thing about platters is that you can customize it to your liking. A few options to add to this nachos dip platters are:
- Pico de Gallo ( I recommend this one from Laura in the Kitchen)
- Layered Dip (salsa, guacamole, etc.)
- Flavoured Queso (like chipotle queso)
What to Serve it With:
A delicious and easy nachos dip platter with two different nachos and grilled corn, salsa, guacamole, queso, and chili con carne as dips.
- 2 tbsp oil
- 2 cobs corn
- ½ small onion sliced lengthwise
- 2 tbsp coriander chopped
- 5 tbsp lime juice
- ¾ jalapeño chopped (or to taste)
- 2 tbsp unsalted butter softened
- 2 tbsp all-purpose flour
- 1 cup whole milk
- 2 cups Mexican blend cheese shredded
- ¼ chili con carne dip
- 1½ cup guacamole
- 1½ cup salsa
- 2 bags nachos different flavors
Heat a grill pan and add 1 tbsp of olive oil. Grill the corn on all sides.
Cut the corn off the cob and add it to a bowl. Add all the remaining ingredients in the bowl and 1 tbsp of olive oil. Put aside and store it in the fridge.
On medium heat, melt the butter and whisk the flour. Once the flour is incorporated and all lumps removed, whisk in the milk. Afterward, add the cheese and mix until smooth.
Make the chili con carne dip.
Add all the different dip in separate bowls, including the nachos. Add the bowls to a tray or place them on the table. Serve it with love!
