One dish that we always throw on the barbecue is chicken skewers. This time we decided to up our game when entertaining outdoors and created a Caribbean Chicken Pinchos instead; we are living in the Caribbean after all.
There are many ways to make Caribbean chicken pinchos—and a lot of recipes out these use an array of ingredients—but I found out that with the few ingredients I used I made my own (very tasty) version of chicken pinchos. Especially when entertaining outdoors, like at a bbq where you have to make several dishes, keeping the costs low can be so important.
In this series, we already covered: the appetizer, the cocktail, and the first meat dish. Now, you will get the second recipe for another delicious and tasty chicken dish. Over the course of next week, I will post a delicious and semi-healthy side dish. The main ingredient is veggies which technically makes it healthy, right?! That what my mother-in-law says anyway.
Caribbean Chicken Pinchos Recipe
Ingredients
- 1 kg chicken thighs
- 3 cloves garlic
- 3 tbsp Adobo seasoning
- 1.5 tsp ground black pepper
- 3 tsp oregano
- 3 tbsp olive oil
- 3 tbsp vinegar
- 1 tsp mustard
- hot sauce (to taste)
Instructions
- Cut the chicken thighs into cubes and add this to a bowl. Add all the remaining ingredients and coat the chickens thoroughly. Cover the chicken and put it in the freezer for at least an hour (best overnight).
- Place the meat on the skewer and grill it for approximately 15 minutes.
