Easy Cake Mix Mini Donuts Recipe

Cake Mix Mini Donuts Recipe with Strawbery, Cream Cheese , and Chocolate flavor

It was a Friday night. I just dove into my bed and before my mind could wander off I realized that my birthday was just 2 days away.  “Shit, I forgot to arrange something to share at work,” I thought. It’s a custom to always give a treat at my office. Last year I brought cupcakes, but this year I didn’t have a clue about what to bring and, honestly, I wasn’t really feeling my birthday either. I knew that I was probably too late to order something, so I would have to make it. After searching Pinterest like a maniac, I settled on making two cakes with cake mix and try to decorate it in such a way that it would look fancy. Even with that in mind, I couldn’t find anything I liked until I saw some mini donut made with cake mix. So, that’s how the idea of a cake mix mini donut came to life.

I looked up a couple of recipes online but at the end, I just went to the supermarket, looked at what flavor cakes and frostings were available, chose 2 types of cake flavors and 3 frostings, and brought them home. I have to admit, I was expecting these cake mix mini donuts to be an easy fix but, in reality, they were even easier than I thought. I even had trouble keeping up with the filling while one batch was being baked in the oven. The baking takes less than 10 minutes, so I had to make sure the second batch was ready in that time frame. The actual frosting took a bit more time and was more labor intensive, but even that was a piece of cake (like literally).

People loved the mini donuts. They were soft, fluffy, sweet, and festive. They looked like a party, tasted like a party, and it all felt like a party. Funny thing is that I’m not even a fan of donuts because they’re so dense, but using cake mix makes the texture very soft and so delicious.

This is also a great treat for a kids birthday party and you can even let your kiddos help you with the making of the donuts. But, Easter is around the corner. How fun would the donuts look on your brunch table?

Cake mix mini donuts recipe with flavors: cream cheese with crumbled oreo, strawberry rainbow, and double chocolate

Servings: 60 pieces
Ingredients
  • 1 yellow cake mix
  • 1 chocolate cake mix
  • eggs
  • vegetable oil or butter
  • water
  • 1 strawberry frosting
  • 1 chocolate frosting
  • 1 cream cheese frosting
  • 120 ml milk approx.
  • sprinkles
  • 8-10 Oreo cookies crushed
Tools
  • 2 Mini donut tins or mini bundt cake tin
Instructions
  1. Preheat the oven to 350°F.

  2. Prepare the cake mix batters (chocolate and yellow cake) according to the package. Amount of ingredients will be on the back of the package.

  3. Grease the tin and fill it with the mixture using a spoon or piping bag. Place it in the oven and bake for about 10 minutes or until a toothpick comes out clean. In the mean time grease and fill the second tin. After the first is done place the second tin in the oven. Let the first batch cool in the tin for a few minutes and then take it out and let the donuts cool on a cooling rack. Keep doing this for the remaining batter.

  4. In a bowl, add the strawberry frosting and while mixing gradually add (approx.) 60 ml milk until you get a creamy frosting. Set aside and do the same for the chocolate frosting. 

  5. Dip the upper part of the yellow cake donuts in the strawberry frosting. Sprinkle the rainbow on top. For the other half add the cream cheese frosting with a knife. Sprinkle the crushed Oreos on top. Dip the chocolate donuts in the chocolate frosting and add the rainbow sprinkles on top. 

  6. Serve with a smile!
